Raw material:

- Fresh fruit of your choice (strawberry, apple, mango or mixed)

- Optional sweetener (honey or agave syrup)

- Lemon juice (to prevent yellowing)

Instruct:

  1. Prepare the fruit: First, wash the fruit thoroughly. If using apples or pears, peel and core them. For berries, simply remove the stems. Chop the fruit into small pieces for easier blending.

 

  1. Blend the mixture: Place the prepared fruit in a blender. If you prefer a sweeter swirl, add a tablespoon of honey or agave syrup. A little lemon juice will enhance the flavor and help preserve the color. Blend until a smooth puree forms.

 

  1. Spread the Puree: Line the dehydrator tray with parchment paper or a silicone mat. Pour the puree onto the tray and spread it evenly to about 1/8" thick. Make sure there are no holes or thin spots as these will cause uneven drying.

 

  1. Dehydration: Set food dehydrator to 135°F (57°C) for 6 to 8 hours. Drying time may vary depending on fruit used and ambient humidity. Check periodically until peels are no longer sticky and are pliable.

 

  1. Cutting and Storage: Once dry, remove the fruit roll-ups from the tray and cut into strips. Roll them up and store in an airtight container. They will keep for several months if kept in a cool, dry place.
